Our Client, located on Paradise Island, Bahamas is seeking a Head Sushi Chef with the following skills and/or abilities: 

 

Confident with ability to pass a very thorough FBI-Like Background Check.

 

Speak Japanese and have worked in a Japanese restaurant (ideally in Japan).

 

Possess minimum of 8 years of Japanese Food and Sushi preparation with 3 years as Head Sushi Chef or Higher.

 

Graduated from an internationally recognized Apprenticeship, Culinary School or Certifiable Training Institute. 

 

Experience reporting to Executive Sushi Chef.

 

Responsible for setting up, organizing and developing Japanese ethnic cuisine and Sushi production within the Company’s budgeted food and menu costing guidelines.

 

Experience developing a Japanese market list with internationally recognized quality products.

 

Responsible for checking all Japanese perishable food items being delivered to the Resort / Hotel.

 

Responsible for organizing numerous Japanese delicacies such as breakfast, desserts, festival items, Sashimi, Teppanyaki and Tuna Nigiri.

 

Capable of providing Photographs of your: Assorted/Traditional Style Sushi ; Sashimi ; Tuna Nigiri.

 

Hands-on Sushi Chef able to demonstrate all Japanese cuisine produced – through food tasting.

 

Experience providing Japanese Banquet Menus when requested by the Executive Chef.

 

Experience developing and training subordinates in Japanese cuisine.

 

Must be able to train and guide the dining room staff in proper Japanese service techniques.

 

Maintains safe, secure and healthy work environment by establishing, following and enforcing standards and procedures within all food outlets producing Japanese cuisine.

Business Minded sustaining Bottom-Line performance including maximizing revenue potential through up selling.

 

Strong command of the English language and how to apply in formal and informal settings.

 Capable of translating all menus in Japanese (to and from English).
