JOB TITLE:Test Kitchen Assistant



 

 

 

 

 

 

SUMMARY:

The position encompasses some creative and analytical responsibilities in assisting the culinary function to develop, test and bring new and improved products to market.

Skills required include: A comprehensive understanding of the Taco Cabana operating system allowing the candidate to effectively input a basic level of culinary creativity including an understanding of Mexican/Latin inspired food. The position requires a comprehensive understanding of Taco Cabana operational procedures, an ability to weigh and measure food products, possessing kitchen cleaning skills, a working knowledge of basic math, an ability to take and record food product temperatures, etc.

 

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Ø  Keeps the test kitchen clean and removes trash. Will mop floors, as needed.

Ø  Visits the closest TC restaurant to pick up inventory products for development work.

Ø  Visit ops test restaurants during ops testing. Technician will buy test products, weigh product, take temperatures and taste products. Check DT times and help identify any issues with procedures.

Ø  Conduct sample product cook studies to determine yields and weights and measures.

Ø  Support needs of TK culinary function.

Ø  Help prepare food samples for evaluation.

Ø  Help conduct competitive studies by visiting the competition, buying product, weighing finished products and ingredients.

Ø  Receive and log in food sample shipments.

Ø  Maintain product and packaging inventory in the TK.

Ø  Clean and organize freezer and walk-in cooler.

Ø  Participate in projects as requested by supervisor.

 

SUPERVISORY RESPONSIBILITIES:

There are no supervisory responsibilities in this position

 

QUALIFICATIONS:

Ø  Operations experience: is familiar and comfortable with the level of operational capabilities within our category.

Ø  Knowledge of our current menu items

Ø  Demonstrated ability to work independently.

Ø  Knowledge of Mexican/Latin cuisine.

Ø  Is flexible and willing to work as part of a team

 

 

EDUCATION and/or EXPERIENCE:

Ø  Taco Cabana restaurant experience needed

Ø  Some college or culinary training preferred

Ø  Good organizational and communication skills a plus

 

LANGUAGE SKILLS:

Ø  Must have good written and oral communication skills.

Ø  Must have good customer service skills.

Ø  Must be able to perceive and react to the needs of others.

Ø  Must be organized, flexible and able to deal with various personalities.

Ø  Bilingual English/Spanish a plus.

 

COMPUTER SKILLS:

Ø  Basic computer skills with knowledge of Microsoft Excel and Word a plus
