DESCRIPTION: Analyze cost for the new recipes, determine profitability and computes weekly purchases. The Culinary Head Clerk directs deli personnel in the day to day operation of the delicatessen department.  Responsibilities include preparing and displaying the product and maintaining proper sanitation within the department and working on the counter. As a management employee, a Culinary Head Clerk will directly oversee and maintain the Chef program, which includes the full service cold presentation, the hot bar and the "grab and go" chef items. Additionally this position requires overseeing and maintaining the Specialty Cheese category and to act as the location "fromager".

BACKGROUND/SKILLS/EXPERIENCE REQUIRED: Skilled in proper customer service Experience in food safety and preparation Prepares all food product to established standards and recipes Assists in maintaining total department standards Available to work flexible schedules that include weekends, evenings, and Holidays Able and experienced in working at a fast pace in a customer sensitive work environment Selected candidate must pass a Skills Evaluation test Culinary Certificate or comparable retail chef experience Applicable production, merchandising and presentation skills to oversee Chef program Take financial responsibility for profit and Shrink control of Chef program Will oversee the management of our Speciality Cheese program and serve as the key "fromager" Ability to assist in the training and development of Deli personnel Chef interview and management interview required
