Ability to manage large dining room and kitchen that involves a large number of employees. EDUCATION and/or EXPERIENCE: A minimum of five years restaurant or food service management experience including catering experience. A B.S. degree in Rest. Mgmt., Dietetics or Inst. Mgmt. may be substituted for up to 1 year experience. College Degree in Restaurant Management preferred, but not required. Responsibilities Manages all aspects of catering/event coordination. Responsible for overall supervision of all Dining Room Staff, Utility Staff, Production Staff and Supervisors (including training, evaluating and disciplining). ESSENTIAL DUTIES AND RESPONSIBILITIES: include the following. Other duties may be assigned. 1. Maintains the Erickson Retirement Communities philosophy and "Vision" statement. 2. Plans, coordinates and books all functions and events at Senior Campus Living. 3. Supervises the overall efficiency of dining room catered operations. 4. Supervises, schedules, evaluates, trains, hires and disciplines of all dining room staff, utility staff, captains, teamleaders, cooks and supervisors. 5. Supervises organization and sanitation of dining rooms, kitchens, storage areas, loading docks and elevators. 6. Ensures proper portioning of foods and attractive plate presentation by servers. 7. Ensures the proper opening and closing of food service operations. 8. Manages the food service operation within budgetary perimeters. 9. Ensures that all services and programs are in compliance with federal, state and/or local laws and statutes. 10. Shows professional knowledge, proficiency and initiative in achieving goals and meeting standards.
