KITCHEN MANAGER FOCUS: * Guests * Training and development * Food quality * Profits * Kitchen maintenance Guests: Implement kitchen standards in order to ensure the best guest experience * Develop working relationship with the Special Events Team to coordinate staffing levels and food ordering for special events and banquets. * Coach BOH hourly employees to reinforce the ideal guest experience. Training and Development: Hire, train and develop kitchen team * Develop BOH hourly team members through training programs. * Assure staffing levels through active participation in selection, annual evaluations and one-on-one coaching. * Provide motivation to the team through recognition and incentive programs. Food Quality: Adhere to recipes and food quality indicators * Communicate and implement changes to Dave and Buster's food products and kitchen systems and procedures. * Insure the freshness of all food products through proper purchasing and product rotation. * Maintain a safe (physical plant and food hygiene) and secure environment for all staff.,br Profits: Drive sales and control costs * Manage food cost, labor cost and weekly inventory. * Manage budgets for kitchen supplies and repair & maintenance. * Analyze financial results for food cost, labor cost and restaurant supplies by period and create and execute action plans to meet or exceed targeted financial performance. * Maintain proper inventory levels and weekly food orders. * Create and maintain efficient schedule for the BOH based on sales trends. * Utilize sales history to accurately forecast trends and holiday business. Kitchen Maintenance: Manage business plan to meet targeted financial performance * Insure the timely completion of all repairs to kitchen equipment or facility. * Initiate preventative equipment maintenance and repair.
