Dining Facility Manager; Food Service Manager and Assistant Manager

Looking for a Dining Facility Manager and Assistant Dining Facility Manager to manage two full time Military dining facilities serving over 2,500 meals a day, seven days a week. The Assistant Dining Facility Manager reports directly to the Dining Facility Manager and Project Manager.  Duties include:Overseeing menu planning, food ordering, meal production and service to include the use of standardized recipes, portion and quality control, maintenance, sanitation and safety standardsSupervising the purchasing, receiving, and inspection of food and non-food itemsPreparing daily/weekly/monthly food service reportsResponsibility for running an efficient, quality operationSupervision of food service union employees including day-to-day management, training, scheduling, daily employee informational meetings, employee counseling, and performance evaluations

Requirements:

Management is required to be trained in proper food preparation and service procedures and have a working knowledge of inventory control, kitchen maintenance, and sanitation codes.  Management is required to have a current food safety or sanitation certificate.

Management must have good written and verbal communication skills and be able to establish and maintain cooperative working relationships with a diverse employee population base.  Manager must have knowledge of applicable regulations, be a high school graduate and have a minimum of three years experience in a high volume food service operation providing cafeteria-style meal service, with one year in a management position. Military experience at the operations level is desired.
