Job Description
The Bakery Production Manager supervises daily operations and personnel in order to achieve maximum sales and profitability in the Bakery and Catering Department. The manager is a working manager who works closely with all levels of staff to establish and maintain quality assurance standards, procedures, and controls. Will establish and maintain systems and procedures for the ordering, receiving, storing, preparing, and serving of food and related products, as well as menu planning and development.
Job Responsibilities & Abilities
1.      Will coordinate and supervise unit personnel regarding production, merchandising, quality and cost control; labor scheduling and staffing; employee training.
2.      Achievement of effective coordination of production, merchandising and sales through ongoing planning, direction, communication, goal setting, brainstorming and teamwork.
3.      Achievement of a safe and clean working environment through safety awareness and training, well maintained equipment, and sanitation conditions that exceed government standards.
4.      Ability to manage in a diverse environment with focus on client and customer services, entrepreneurship and building and growing a strong business is essential.
5.      Ability to identify defects in the preparation and service of food and implement improved quality control procedures.
6.      Booking, selecting and costing menu items. Manage inventory and ordering.
7.      Responsible for interacting will all food department shifts including early and late shifts. Must be willing to be flexible on work hours and they should cross the two shifts.
Qualifications
·        Extensive knowledge of bread, pastry, and sweet goods scratch production required. Passion and appreciation for scratch bakery preferred.
·        Degree in baking technology required. In the absence of formal education, three to six years experience at a bakery production facility may be substituted.
·        Position requires three to five years retail store experience with prior supervisory experience in bakery industry.
·        Has strong dough formulation skills; especially with cookies, muffins, bread and a good understanding of food/baked goods system.Â
·        Position requires an in-depth understating with regulatory agencies and their requirements.
·        Attention to detail, excellent customer service, and good computer skills are all important for the success in this role.
·        Demonstrate the ability to communication effectively, both orally and in writing, with all levels of management and staff.
