SUMMARY

Supervises and coordinates activities of cooks and related staff in preparing and presenting menu items according to standard recipes. Maintains a clean and safe work environment by ensuring all equipment and supplies are in keeping with the standards and expectations of Hollywood Casino at Penn National in order to assist in reaching profitability, guest satisfaction, work force strength and compliance goals. Provides encouragement, sets high expectations, and sets proud and positive examples necessary to ensure a fun, exciting and professional working environment for our staff and a pleasant and entertaining experience for our guests.

RESPONSIBILITIESResponsible for maintaining consistent attendance and performance records. Maintain food cost within budgeted parameters. Control portion size, minimize waste and present menu items according to specifications. Maintain a clean and sanitary area at all times in full accordance with ServSafe guidelines and Pennsylvania state regulations. Prepare weekly schedules and control labor costs. Educate, train, and manage cooks to follow policies and standards. Maintain positive guest relations. Communicate with other culinary supervisors and managers to ensure efficient service and properly prepared food. SUPERVISORY RESPONSIBILITIES

Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning and directing work; appraising performance; rewarding and coaching employees; addressing concerns; and resolving problems. Supervisory responsibility over one of the following specific, functional areas: Concessions, Food Court, Production Kitchens, Ala Cart Restaurants Supervise 10 employees Supervise 25 employees indirectly EDUCATION AND/OR EXPERIENCE

High School Diploma/GED; Associate’s/Technical Degree in Culinary Arts preferred; 3-5 years of experience or equivalent combination of education and experience.
