POSITION REQUIRES A MINIMUM OF 5 YEARS OF EXPERIENCE IN CATERING FOOD OPERATIONS WITH AT LEAST $500K PER YEAR IN VOLUME, AND CONCESSION FOOD OPERATIONS WITH AT LEAST $2M PER YEAR IN VOLUME.

 

Kitchen Manager / Chef needed for national visitor service company at the Los Angeles Zoo. Experience with concessions, fine dining and volume picnics, management of multiple events, training kitchen staff, and kitchen management is a must.  Working knowledge of Microsoft Word and Excel are also necessary to succeed.  Ideal candidates will possess a related Culinary Degree.

 

ESSENTIAL RESPONSIBILITIES:
•Manage, train and evaluate back-of-the-house personnel.
•Conduct inventory of food items, supplies and equipment.
•Plan or participate in menu planning and food production.
•Coordinate activities concerning food preparation, kitchen and storeroom areas.
•Inform front-of-the-house personnel of menu changes, specials and shortages.
•Meet with staff, customers, or client groups to plan menus for special occasions.
•Implement and enforce sanitary practices for food handling, general cleanliness and maintenance of kitchen and/or dining areas.
•Ensure compliance with all applicable health and safety regulations.
•Perform other related duties, tasks and responsibilities as required from time to time.
•This is a physical, in-the-field position, with desk duties limited to scheduling, time planning, and product ordering only.
•Menu development and planning.
•Assist concession and catering managers
•Interaction with customers and clients on a daily basis.
•Staffing, scheduling, training and developing an hourly staff.
