Date Posted: 9/5/2008 Summary:This is a part-time position working 36 hours per week.To manage, supervise and coordinate the work of a large number of production staff within a unit of Dining Service. This position reports to the Unit Manager. The Unit Kitchen Manager supports the organization's mission of providing students, the Caltech community, and guests with high quality customer service. Job Duties: 1. Manage, schedule, assign, train, and monitor the work of 15 staff members, participating in the preparation of foods as required. Instruct employees in new methods, techniques, and procedures in food preparation. 2. Estimate food, supply, equipment, and personnel requirements according to menus and estimate number to be served. Assure proper labeling and storage of foods and supplies. 3. Monitor, participate and coordinate preparation of food and supply orders. Monitoring of cost of goods and sales mix. 4. Assist and create menu and meal planning and maintain portion and food cost controls. 5. Coordinate unit activities with other unit supervisors and managers as required. 6. Evaluate the quality of raw food and finished products with attention to presentation.Support standardization of food production in multiple kitchens.7. Inspect equipment and facilities to assure proper use, maintenance, and sanitation. 8. Responsible for coordinating the purchasing of merchandise as well as coordinating the ordering and receiving of merchandise with Unit Manager and Purchasing Manager for an operation of $1.1 million in cash flow. 9. Respond to inquiries from faculty, staff, students, and public as required. Oversee inventory, ordering and receiving practices.10. Maintain maximum standards of sanitation and safety. Must be able to lead by example, develop team loyalty, and motivate staff to higher performance levels. 11.Must be hands on, flexible and supportive in times of short staffing. Performs other related duties and responsibilities as required or assigned. Supervision received: General supervision is received from the Unit Manager. Minimum Requirements: A Bachelor's degree in Food Service management or certification by a recognized Culinary Institution, or equivalent combination of education and experience is necessary. The selected candidate must have the ability to carry a minimum of 50 pounds of cooking utensils, cooking pots, cooking supplies and cooking ingredients repetitively throughout the day. The selected candidate must pass a pre-employment background investigation and post-offer physical examination to be hired for this position.Five-year experience in preparation of finely prepared regional and international foods is important. This position requires a strong knowledge of large batch production, sauces and soups from scratch. ServSafe certification will be give preference or need to be able to pass ServeSafe test with in the first 6 months of employment. Must be comfortable with computers and restaurant related mathematical formulas for cost and profit calculations.Caltech is an Affirmative Action/Equal Opportunity Employer.
